Potatoes, Chickpeas and Broccoli with Lemon-Tahini Sauce

This dish comes together in less than ten minutes.  One serving contains 15.3 g of protein and costs $1.20.

serving size: 1
  • 250 g potatoes, diced (approximately 1 and 2/3 cups)
  • 1/2 cup chickpeas (cooked)
  • 1.5 cups frozen broccoli
  • 1/2 TBSP tahini
  • 1 TBSP lemon juice (more or less to taste)
  • garlic-salt to taste

Microwave the diced potatoes in a microwave-safe dish for 6 minutes, stirring once halfway through.  While the potatoes cook, steam the broccoli in a pot, and then drain.  Finally, mix everything together.

total cost per serving:  $1.20


*Note, the price for chickpeas is based on dried beans boiled (not canned), and the price for frozen broccoli is based on a 1-lb. bag [organic!] that I bought at Trader Joe's for $1.69.  The price for potatoes is based on a 5-lb. bag from cub foods that cost $3.49.  The lemon juice is from a bottle - not from fresh lemons.
